What is a bunny pancake, you ask? Well, it’s a pancake designed to bring smiles and conversation to mealtime. Why simply eat pancakes together when you can enjoy them in a cute, fun way?
If you grew up with Mickey Mouse pancakes or make them for your children, you are familiar with the extra joy a decorative pancake meal brings, compared to a stack of boring round ones. Who knows, after creating the fluffiest bunny full of deliciousness, you may awaken your inner artist and start surprising the family with pancake creations on a regular basis.
This particular bunny pancake recipe calls for adding honey or syrup to the pancake batter, which I feel gives it an extra boost of yumminess. Then, to top it off, you’ll decorate the cute little creature with sliced almonds and Greek yogurt. It’s the perfect way to sneak additional protein and goodness onto your kids’ plates, as well as your own.
Are Bunny Pancakes Healthy?
Pancakes are what you make them. If you add a lot of sugar for toppings, the cakes won’t be as healthy as when you top them with fruit. The recipe itself uses syrup or honey rather than sugar. Doing so allows you to make healthier choices, such as all natural local honey, or pure maple syrup with no additives.

INSTRUCTIONS
Whisk & Pour
Combine the whole wheat flour with other dry ingredients, then add the wet ingredients to form a smooth batter. Pour it onto a buttered griddle to create your bunny shape with 5 pancakes (2 small and 1 big circular ones, 2 oval ones).
Flip & Brown
Flip when you start seeing bubbles forming and cook for two additional minutes.
Assemble & Decorate

Ingredients
- 2 cups whole wheat flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon honey or pure maple syrup
- 2 cups almond milk or any preferred non-dairy milk
- 2 large eggs
- 4 tablespoons unsalted butter melted, plus more for the griddle
- Non-fat Greek yogurt for serving (or whipped cream)
- Fresh berries for decoration (optional)
- Sliced almonds for decoration (optional)
Instructions
In a large mixing bowl, whisk together the whole wheat flour, baking powder, and salt.
Create a well in the center of the dry ingredients and add the honey (or maple syrup), almond milk, eggs, and melted butter. Stir the mixture until just combined (don’t overmix).
Preheat a non-stick griddle or skillet over medium heat and brush with butter.
For each bunny, pour the batter to form two large oval pancakes for the ears, one large round pancake for the head, and two smaller round pancakes for the feet. Use a spoon to help shape.
